Ingredients
- 8 eggs
- 1/2 cup bell peppers, diced
- 1/2 cup spinach, chopped

- 1/4 cup milk

Instructions
Preheat oven to 350°F. Spray muffin tin with olive oil. Whisk eggs, milk, salt, and pepper. Distribute vegetables and feta evenly in muffin cups. Pour egg mixture over vegetables until 3/4 full. Bake 20-25 minutes until set. Let cool 5 minutes. Store in fridge for quick breakfasts throughout the week.
