Ingredients

  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup kalamata olives
  • 1/4 cup feta cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Fresh parsley
  • Salt and pepper

Instructions

Cook quinoa according to package directions and let cool. In a large bowl, combine quinoa, tomatoes, cucumber, olives, and feta. Whisk together olive oil, lemon juice, salt, and pepper. Pour dressing over quinoa mixture and toss. Garnish with fresh parsley. Serve at room temperature or chilled.
