Ingredients
- 1 large sweet potato, cubed
- 1 can chickpeas, drained
- 2 cups kale, chopped
- 1/4 cup tahini
- 2 tbsp lemon juice
- 1 tbsp maple syrup
- 2 cups cooked brown rice
- Sesame seeds
- Salt, pepper, paprika
Instructions
Roast sweet potato cubes with olive oil, salt, and paprika at 425°F for 25 minutes. Roast chickpeas separately for 20 minutes until crispy. Massage kale with a bit of olive oil. Whisk tahini, lemon juice, maple syrup, and water for dressing. Assemble bowls with rice, sweet potato, chickpeas, and kale. Drizzle with tahini dressing and sprinkle sesame seeds.
